In augustus gaf ik, als ‘co-founder’ van de Kweecker, een interview aan NX-food over de Kweecker. In die periode hadden wij met TinT de Kweecker net geïnstalleerd bij het Fiedel Richter restaurant in Berlijn als onderdeel van de METROpolitan pilot in samenwerking met NX-food. Hieronder kunt u een aantal passages uit het interview lezen.
“Our team of six started working on the first prototype back in 2015. We were all working in greenhouse development on a large scale in the Netherlands and decided to make this technology available in a smaller format which could be placed inside the restaurant. From one side we wanted to use the best technology, LED lights and climate controlling system which would be really efficient. On the other hand, we understood the importance of the visual part and invested in the top quality design of glass and steel.”
“These are mostly middle to high-class restaurants focused on fresh and local products. In the Netherlands, Kweecker is for instance installed in De Librije
restaurant which has received 3 Michelin stars and has all kinds of herbs grown in-house. However, it can also be used in smaller cafes and bars to grow mint and rosemary for tea infusions or cocktails.”
